3 lbs. Yukon Gold Potatoes chopped into 1″ pieces

1 small Red Onion finely chopped

7 cloves of Garlic finely sliced

1/2 cup chopped Klaussen Dill Pickles

4 Hard boiled Eggs chopped

1/2 to 3/4 cup Terrapin Ridge Dill Pickle Mustard

1 1/2 to 2 cups Mayo (we prefer Duke’s)

1/2 tsp Paprika

1/4 cup finely chopped Chives (if desired)

Salt & Pepper to taste


Boil Potatoes and Garlic together until fork tender and strain. In large bowl combine all ingredients except Potatoes and Eggs and mix well. Gently fold in Potatoes and Eggs. sprinkle with Paprika and chill. Enjoy!
